Fruity Turkey Brine
Ever thought about brining your turkey! Never a dry piece of meat, ever again.
The citrus fruit in this brine not only adds a great tangy flavor but also act to tenderize. Take two cups of the the water and place in saucepan..Bring to a low boil. Add salt and stir to dissolve. Pour into a large pot. Cut lemon and orange into 1/8ths. Squeeze juice into pot and drop in . Add rest of ingredients.
I like to put Turkey in large trash bag, plain ( no scented febreze bags! ha!) and place cooled water and all ingredients into bag. Tie bag with knot and try to get as much air out of the bag as you can.
I place my turkey bag in a cooler, and place cooler in the shower or tub, and cover with ice………….brine for 1 hour per pound……….at least a full 24 hours. Check on turkey throughout, checking ice level………………just drain the cooler if needed, and replace ice if needed as well.
Before baking the turkey, take out of bag and let rest, so that the water drains from the bird and then bake as directed.
Here are my ingredients:
1 gallon water
1 1/2 kosher or sea salt
1 lemon
1 orange
1 onion, cut into thick slices
4 cloves garlic, crushed
4 bay leaves
1 tablespoon dried thyme
( don’t hesitate to add more of the fruit……….the lemon does wonders!)

Sensational Succotash
4 slices turkey bacon, diced
3 cups cut carrots
1 yellow onion
2 red peppers
24 oz. edamame
1 1/2 cups cut corn
8 each yellow and red cherry tomatoes
1/2 cup plain greek yogurt
1 tsp dried or fresh parsley
salt and pepper to taste
Saute bacon. Once cooked, drain fat and immediately add carrots and onion. Saute 3 min. and then add red pepper and cook another 4 to 5 min, until onions are translucent. Add edamame and corn and cook, about 1 min. Reduce heat and add greek yogurt and tomatoes. Cook for about another 4 min. until sauce thickens. Complete with parsley, salt and pepper.
Great for a leftover snack!
